FULL RECIPE ⬇️ INGREDIENTS FOR TACHIN: • 2 cups basmati rice • 2 tsp salt • 2 tbsp butter • 1⁄2 cup dried barberries • 1 tsp rose water • 1 tsp saffron ground •2 tbsp hot water • 3 egg yolks • 1 cup plain whole-milk yogurt (not greek) • 1⁄2 grapeseed oil or vegetable oil DIRECTIONS: 1) Bring a large pot of water to a boil and add 2 large palmfuls of salt (about 1⁄2 cup). While you’re waiting for the water to boil, rinse rice in water until water from rice runs clear. 2) Add rice to pot and give it a few stirs to prevent rice from sticking to the bottom. Stir occasionally until rice floats to the top (6-8) minutes but rice shouldn’t be too cooked or softened. 3) Melt butter in a pan over medium-low heat. Cook dried barberries, stirring often, until rehydrated, about 2 minutes. Remove from heat and stir in 1 tsp water 4) Preheat to 400°. Combine saffron and 2 Tbsp. hot water in a large bowl. Let sit 10 minutes to allow saffron to steep and draw out as much color as possible. Mix in egg yolks, yogurt, 1⁄2 cup oil, and 2 tsp. salt. Scatter rice over yogurt mixture and gently toss to ensure every grain is coated but don’t break the rice. 5) Coat a 10" pie dish with oil. Add half of rice mixture then layer barberries, then layer rice again and top with more barberries. Cover dish with foil and bake for 65-80 minutes until edges of rice are golden brown.
