LEMONGRASS CHICKEN
Easy weeknight chicken dinner!
Score chicken breasts with cross-cross pattern on top side. Marinate for at least 30 minutes in equal parts tamari (or soy sauce) and toasted sesame oil, plus a squeeze of honey, red pepper flakes, ginger, garlic and smashed lemon grass. Sauté in sesame oil on medium high heat for about 3-4 min per side, depending upon thickness of chicken. Serve over Jade Pearl rice (or jasmine rice) with sautéed purple cauliflower and snap peas. Garnish with cilantro.
