During my visit, I met with Brendan Tran, Co-Owner & Chef. Little Kirin’s menu is inspired by various Asian cuisines and pays homage to their owners’ backgrounds and cultural roots. Their innovative Pho Short Rib Sandwich includes ciabatta, hoisin, braised short rib, Thai basil, crispy fried shallots, jalapeno, scallions, onions, and cilantro. It’s paired with their Pho broth which they make in-house and simmer for hours. I love that Little Kirin is able to take familiar dishes and transform them into something new. The Pho Short Rib Sandwich has parallels to a French Dip, but of course ultimately involves classic Pho components. The sandwich soaks up the beefy and umami broth to provide a symphony of flavors.
