Smashed Pastina Potatoes with Rustic Pesto Aioli
For Potatoes:
1 1⁄2 Lbs. baby red or yellow potatoes
5 Tbsp. extra virgin olive oil
2 Tbsp. uncooked Barilla Pastina
Sea salt & black pepper to taste
For Aioli:
1⁄2 Jar Barilla Rustic Basil Pesto
1 Cup mayonnaise
3 Garlic cloves, minced
1 Tbsp. lemon juice
Sea salt & black pepper to taste
Directions:
Preheat oven to 425 F. Boil potatoes in salted water for 15-20 minutes or until done, then drain well. Drizzle a sheet tray with 2 tbsp. of olive oil, salt, and pepper. Place potatoes on the sheet tray and gently smash each potato with a metal spatula or glass. Sprinkle each potato with pastina, salt, and pepper then lightly smash again. Drizzle with remaining olive oil and bake for 15-20 minutes or until crispy. Meanwhile, mix mayo, garlic, lemon juice, salt, and pepper. Top with Barilla Rustic Basil Pesto. Transfer potatoes to a platter and serve alongside pesto aioli.
