RAINBOW RICE PAPER ROLLS 🌈
one of the most common questions I get asked is what to take for lunch when you don’t have a microwave - these are my go to
you need to
1. Prep rice paper according to directions on packet (I used the coloured sheets to make them rainbow but you can use the plain ones if that’s all you can find)
2. Place noodles, thin slices of capsicum, carrot, cucumber spring onion as well as satay tofu strips and slices of avocado
3. wrap into a roll
4. sauce: sauce
blend together sauce ingredients
1/3 cup maple syrup , 1/3cup peanut butter , Juice of half orange, 1 teaspoon minced garlic , 1/2 tablespoon of minced ginger, 1 teaspoon chilli
OR sweet chilli sauce of course
these are a perfect lunch for uni or work or on the go
super easy meal prep idea as well to save time in the kitchen
