👉🏼@maxlamanna SUPER GREEN SPAGHETTI ➡️Tonight’s hero ingredient is SPINACH/ LEAFY GREENS 🌿🌱 I often ask you on IG stories ‘which foods you throw away the most?’ And spinach and leafy greens always come to the top of the list. Here’s an easy recipe to make more use of what you have in your fridge! TIP: Wash your leafy greens as soon as you get home from the market/store, give the greens a wash/rinse and pay dry. Store in an airtight container with a clean tea or paper towel to absorb moisture. This will keep your leafy greens lasting 7-10 days longer. *remember: to replace paper towel every day* Serves 4 360g (12 oz) spaghetti 2-4 large handfuls of spinach 2-3 garlic cloves A bunch of basil 1 tbsp olive oil 30g (1-2oz)vegan Parmesan, grated 72g (1/2 cup) frozen peas Pinch of salt and black pepper Lemon zest & juice, optional Add salt to a saucepan of boiling water. Cook the pasta according to the packages instructions. Add the spinach, garlic and peas - cook for 1 minute. Remove veg and add to a blender with the remaining ingredients. Blend until smooth. Strain pasta and toss with the sauce.
