Super easy breakfast or brunch recipe - the scrambled tofu is my favourite bit. What’s your favourite part?
280g extra firm tofu
1/4 tsp turmeric powder
1 tsp olive oil
1 tbsp nutritional yeast
2 tbsp oat milk
Salt + black pepper
Warm the oil in a frying pan. Add the tofu (squeeze) and add the remaining ingredients. Stir to combine and cook for 2-3 minutes.
400g tin of black beans, rinsed and drained
1/2 red onion, diced
2 garlic cloves, minced
1 tbsp olive oil
1/2 tsp cumin powder
1/4 tsp chilli powder
25ml water
Salt + black pepper
Add the oil to a saucepan once warm, add the onion and garlic, cook for 5 minutes until soft. Add the remaining ingredients and cook for a further 5 minutes. Transfer to a food processor and blend until smooth.
