This is tteokgalbi, or rice cake galbi! 🍖 “Tteok” in the name comes from how the meat’s texture and appearance is like a rice cake patty. I don’t see this at many restaurants in the US but I loved it as a homecooked side dish or restaurant order growing up! RECIPE👇🏼 20-25 rice cakes — marinated meat — 500 g beef + 300 g pork (ground) 6 tbsp soy sauce 2 tbsp corn syrup (or honey) 2 tbsp sugar 2 tbsp pear juice (optional) 1 tbsp garlic 1 tbsp corn starch or rice flour 1/2 tbsp sesame oil 1/2 onion, chopped 1 green onion, chopped — glaze — 1 tbsp soy sauce 1 tbsp honey 1 tbsp sesame oil 1. Mix ground beef, ground pork, soy sauce, corn syrup, sugar, pear juice, garlic, and sesame oil together. Beat it like you’re kneading a dough (I know I said to beat it in the video BUT still avoid overworking it!) 2. Add in green onions, onion, and mushrooms. Mix to combine. 3. Blanch rice cakes for 1 minute or until soft and rinse in cold water. 4. Shape the meat patty around the rice cakes. 5. Pan fry on each side over medium-low heat.
