đsweet + spicy âchickenâ tofu & broccoliđ„Š
This might be the recipe you need to make before the week is over! Itâs quick, easy and delicious. This might be my new favourite way to make âchickenâ tofu.
Hereâs how to make it...
Sauce:
125ml veg stock
2 tbsp brown sugar
3 tbsp soy sauce
2 tsp rice vinegar
Black pepper
Cornflour mixture:
1 tbsp cornflour
1 tsp water
Fry these in 1 tbsp oil:
1-2 garlic cloves, mince
1/2 red chilli, chopped
1 tsp red chilli flakes
The best part:
1 broccoli, steamed
240g extra firm tofu
1 tbsp cornflour
Whisk the sauce ingredients until combined and set aside. You can make this in advance up to 3 days.
Press the tofu to remove excess water. Tear into pieces, toss with cornflour and bake at 180C for 20 minutes until golden brown and crispy.
In a frying pan over medium high heat, add 1 tbsp oil. Once warm, add fresh chillies, red chilli flakes and garlic, stir and cook for 1 minute. Add the sauce and simmer. Add the cornflour mixture and whisk until it thickens then add the baked tofu and broccoli, toss to coat, remove from heat and serve immediately.
Serve with cooked rice, lime zest and juice and fresh herbs.
