Bergamot is a bitter fruit that ripens from green to yellow. It comes in all shapes and sizes, some as big as a large orange, some knobbly and misshapen. The trees begin to produce fruit four to five years after planting. Bergamot farms can be anything from a small holding of a few trees to larger fields. Not grown for supermarkets, they have none of the aesthetic restrictions other citrus fruits have imposed on them.
