We use Icelandic moss in the base steep of our non-alcoholic aperitif ‘Midnight Sun’. Icelandic moss grows in abundance in the northern regions of Europe and is particularly characteristic of the lava slopes and plains of the north and west of Iceland. It has a bitter and earthy flavour profile likened to that of a bitter herb, which helps to balance the overall flavour profile of ‘Midnight Sun’.
