To create our non-alcoholic aperitifs we use a rotary vacuum still to remove the alcohol without removing the flavour. Unlike alcohol distillation, which cannot be tuned finely enough to separate the alcohol from the flavours or to concentrate just one or a few flavours individually, a rotary vacuum still allows us to separate delicate flavours without heat damage and capture single or multiple flavours.
