Part 1: Branzino All' Acqua Pazza 🐟
~Branzino has become a favorite in Italian cuisine due to its sweet flaky meat that absorbs flavor beautifully. As a smaller fish, it has few large bones, making it ideal to roast or poach whole and share.

Acqua Pazza translates to "crazy water" in Italian; traditionally it refers to a white fish which is poached in said "water." We've put a twist on this classic by roasting it in our wood oven. Here’s Chef @djjazziechef seasoning and stuffing the fish, tying the stuffing inside with twine before placing it in our wood oven to roast.
