The Pisco Punch should be the official cocktail of San Francisco. You can now get a new version that I'm rather proud of at ELIXIR. It was a staple of late 19th Century San Francisco saloons because of the maritime trade route to the city, which passed through the Port of Pisco and brought loads of that local immature brandy to our shores. Though many made their own version, it was Duncan Nicol at the Bank Exchange Saloon that made it famous with the secret recipe he took to his grave. My friend and San Francisco barman Duggan McDonnell, dug deep into the story in his book Drinking the Devil's Acre, and his research inspired my recipe. In keeping with tradition, it's a bit of a secret, so head over to the bar and give it a try.
