Ways I reduced my food waste this week using up all the odds and ends in the fridge and fruit bowl. And once again, I have a whole head of cabbage that’s been sitting there for weeks. I really need to stop buying it 🙈 I don’t measure ingredients and go by feel and taste, but I have included the two dressing and crispy tofu recipes below. As always, these food-saving videos are to inspire you to get creative in the kitchen and use up what you have in your fridge and pantry before ducking out to the shops to buy more food or ordering ubereats. Slaw dressing: 4 tbsp apple cider vinegar, 4 tbsp olive oil, 1 tbsp honey or maple syrup, half fresh lemon. Green tahini dressing: 1/2 cup of tahini, a handful of fresh parsley, 1 clove of garlic, 2 tbsp olive oil, 1 tbsp maple syrup and a pinch of salt and blend till smooth, adding water a spoon at a time until you have a runny consistency. Crispy tofu: Press the tofu block between some paper towel to absorb some of the moisture. Break into chunks and in a bowl and toss with 4 tbsp of corn flour, 1 tbsp of garlic powder and a pinch of salt and pepper. Add to a baking tray and lightly coat with olive oil. bake until golden and slightly crispy. #foodwaste #foodsaver #plantbasedrecipes #nourishbowl
