To conclude Zero Waste Week, we present to you our ‘tomato gazpacho’ prepared by Chef @adamhandling 🍅
“First, we remove the skin and then semi-dehydrate the tomatoes for an hour, then we make a powder from the tomato skins and turn it into a wonderful, vibrant tuile 👏
All the tomatoes we have that aren’t quite ‘sexy’ enough we blend with garlic, lemon and vodka as well as some of the juice from our kimchi, we freeze that with nitrogen and finish the dish.
It’s super respectful and uses that little Tom in its entirety.
