Healthy raspberry banana muffins!!
This is really my original banana muffin recipe but I added raspberries on top and they tasted so good! The muffins are so fluffy and light and the perfect snack! 🤍
I didn’t add in any sweetener because the ripe bananas make it super sweet but feel free to add in a little maple syrup to your liking!
Recipe:
Makes 12 muffins
- 3 ripe bananas
- 3 eggs (can sub for 3 flax eggs see notes)
- 1/4 cup avocado oil
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 3 cups almond flour
- 3/4 cup fresh raspberries
- optional: 2 tablespoons maple syrup to make it sweeter
Directions:
1. Start by mashing the bananas with a fork in a large bowl. Add the rest of the wet ingredients and mix.
2. Add the dry ingredients and mix again. Spoon the batter into a lined muffin tin and add raspberries on top.
3. Bake at 350° for 22-25 min or until a toothpick comes out dry!
Notes: To make your flax eggs, combine 3 tablespoons ground flaxseeds with 6 tablespoons water and let sit for 10 min to gel.
