Healthy lemon olive oil cake!! 💛 I’ve been wanting to make this cake for so long and I wish I did sooner because it’s so so good! It’s super light and fluffy and is the perfect cake for summer! Recipe: Makes 1 cake - 1/4 cup olive oil - 1/4 cups fresh lemon juice - 1/3 cup maple syrup - 2 eggs - 2 tsps lemon zest - 1 tsp vanilla extract - 2 cups almond flour - 1/2 tsp baking soda - 1/2 tsp baking powder - Optional: 2 tbsp powdered monk fruit (see notes) Directions: 1. Start by whisking the olive oil, maple syrup, lemon juice, eggs, and lemon zest, and vanilla together in a large bowl. Add in the rest of the ingredients, except for the powdered monk fruit of using. 2. Pour into a lined or greased cake pan (I used a 7” one) and bake at 350°F for 30-35 min or until a toothpick comes out dry. 3. Let the cake cool before sifting the powdered monk fruit on top. Cut into slices and enjoy! Notes: As an alternative to powdered sugar, I used monk fruit and used a blender to grind it up! #healthyfood #healthyrecipes #healthycake #lemoncake #summercake
