Joutine! “Jew-ish” poutine… Montreal is one of those places that creates lasting taste memories. Sometimes a dish shows up in my mind and I have to come up with a name… and sometimes the name gets there first… the name and the idea for this showed up at the same time. I knew both what it would be and what I would call it all at once Jewish brisket and a “20 hour gravy” made of that braising liquid and house-made beef stock ladled over a sizzling plate of crispy potatoes and melty mozarella curd, we top it with our chopped dill pickles because almost everything is better with a pickle. Bring an appetite, this one’s got some heft. And don’t be shy, say it loud!! “JOUTINE!!!”
