Healthy summer salad!! This salad is simple but so yummy, light, and perfect for summer! I love adding fruit to salads and the peaches and blueberries taste so good in this one! Recipe: Serves 4-5 Salad: - 6-8 cups arugula - 1 peach sliced - 3/4 cup blueberries - 1/4 cup chopped almonds Dressing: - 1/4 cup olive oil - 1/4 cup apple cider vinegar - 1 garlic clove - 1 tsp honey - 1/2 tsp dijon mustard - salt & pepper to taste Directions: 1. Start by roasting your almonds by spreading them onto a pan and baking at 350°F for 10-15 min. 2. Add all of the salad ingredients into a large bowl. 3. Blend the dressing ingredients together and pour over top of the salad. 4. Mix and enjoy! #healthysalad #salad #summerrecipe #healthydinner #saladrecipe
