What you need:
2 Tbsp Vegan Butter
1⁄2 cup Yellow Onion or Leeks, finely chopped
8 Tomatoes, cored & chopped
2 Carrots, chopped
4 cups Vegetable Broth
1 large Bay Leaf
1 tsp Dried Thyme
2 Tbsp fresh Basil, chopped
2 cups Unsweetened Oat Milk
Salt & Pepper, to taste

Directions:
1. Melt butter in a large pot over low heat. Add the onions or leeks and cook for until soft – about 5 minutes.
2. Add tomatoes, carrots, stock & herbs and bring to a boil.
Lower heat and simmer covered 20-30 minutes, stirring occasionally until vegetables are tender.
3. Remove from heat and discard bay leaf. Puree tomato soup using an immersion blender or working carefully in small batches use a heat-safe blender until smooth*
4. Return to pot over medium low heat, stirring in oat milk and let simmer for 5 minutes.
5. Top with fresh basil, your favorite dairy-free parm, or serve and enjoy as is!
