The fall/ winter cocktail menu unleashed at @otonolosangeles a couple of weeks ago. I was pretty involved in the design of the menu and here is one of my contributions: The Pumpkin King.
White and dark rums, Pedro ximenez sherry, spiced pumpkin syrup, a graham cracker rim, and the secret weapon: Greek Yogurt.
One of the best drinks I ever had was in London at @americanbarlon. It had yogurt and ashes in it and it inspired me to incorporate yogurt here.
Yogurt works threefold: it replaces the acid of a citrus, it lends a creamy texture, and the fat content helps bolster flavors on the palate.
