We are thrilled to announce that our Head Chef @amberlfrancis has been nominated in the @britishrestaurantawards for the Best Young Chef category! We asked Amber a few questions: 1. Where do you get your inspiration from? I feel most inspired by our beautiful Grounds at @birchcommunity . The Grounds team work hard to harvest all the fresh and seasonal produce we have so I can build the ever-changing menu around this. I then supplement what we use from our market garden with our suppliers. 2. What’s your favourite dish to cook? It would have to be the pea dish that has unfortunately just come off the menu! Mainly for its seasonality and simplicity which really brings out the natural flavours of the dish. It’s also a great hit with guests! They can’t believe such a minimalistic dish can have so much flavour. The corn dish that has come on to replace it is a joy to make too! 3. How does it feel to be nominated for best young chef?
