How to make @TessBegg’s Vegan Choc Chip Matcha Muffins 💚
Ingredients:
1/2 cup coconut sugar (see above)
3 tbsp maple syrup
1/2 cup soy milk, warm
2 tbsp melted coconut oil
1 + 1/2 cup plain flour (*or spelt flour, buckwheat, GF blend etc)
1 tbsp matcha (or more if you like)
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/2 cup vegan chocolate chips
1. Add the sugar, syrup, milk, oil to a mixing bowl and whisk until combined.
2. In a separate bowl, sift in the flour, matcha, baking powder/soda and salt. Mix together, then add wet ingredients and gently combine. Fold through the choc chips.
3. Add muffin liners to a baking tray and fill them 3/4 full with batter. Bake in a pre-heated oven at 180°c /350F for 20 minutes. Allow to cool on a rack and enjoy!
*Different flours will alter the consistency, you may need to add more milk if it’s too dry.
