This soft-serve style Kulfi features pistachio throughout for a traditional recipe, reimagined! #KitchenAidStandMixer #KitchenAidAmbassador #MakeToStandOut PREP TIME 24 hours COOK TIME 30 minutes YIELD 1 Pint Ingredients 2 cups half and half, cold 2 cups heavy whipping cream, cold 13 oz can of condensed milk, refrigerated 7-8 strands of saffron 1⁄4 cup pistachios, chopped Method Freeze your clean KitchenAid Ice Cream Bowl in the freezer overnight, for a minimum of 16 hours. In the Stand Mixer mixing bowl using the whisk attachment, mix together the liquid ingredients, reserving 1 tablespoon of cream, making sure all of them are cold and directly out of the refrigerator. Warm the reserved tablespoon of cream in the microwave for 10 seconds before adding in the saffron and mixing until the dairy changes colour and is fragrant. Add into the liquid mixture and mix well for a maximum of 3 minutes. Remove the whisk attachment, add frozen Ice Cream Bowl to the Stand Mixer with the dasher, and turn on to Stir speed. Slowly add in your saffron ice cream mixture and allow to churn for 30 minutes into a soft serve texture. Remove your Kulfi Ice Cream into a freezer safe container and fold in the pistachios, reserving some for garnish. You may serve immediately or for a firmer texture, allow the Kulfi Soft Serve to harden for a few hours in the freezer before serving.
