Ingredients Ice cream bars: 1 pint of preferred Cosmic Bliss vanilla 1 can coconut milk 2/3 cups coconut sugar 1/4 tsp salt Chocolate coating: 1 1/2 cups chocolate chips 1/3 cup buckwheat 2 tbsp coconut oil Instructions Place 2/3 of vanilla ice cream into a lined loaf pan. Freeze for about an hour. Meanwhile simmer coconut milk and coconut sugar over low heat for about 30-40 minutes until caramel has thickened. Add in salt and pour on top of frozen vanilla ice cream. Freeze for another 2 hours. Slice into bars and dip in melted chocolate.
