How to make @thenourishedbite’s Baked Vanilla & Raspberry Doughnuts 🍩 ❤️
To make these, simply follow the vegan vanilla cake recipe below, but swap the vanilla protein powder for 45g of vegan strawberry cheesecake protein and top each one with stewed raspberries. The last step is to dunk in silky dark chocolate. You will LOVE this recipe!
Healthy Vegan & Cherry Cake with Choc Frosting
INGREDIENTS
1/4 cup almond milk
1/4 cup apple sauce
1 + 1/2 tsp apple cider vinegar
3 tbsp pure maple syrup
1 tbsp almond butter powder with dash of water to make paste
1 tsp vanilla essence
1 + 1/3 cup buckwheat flour + almond meal (a blend of both)
1 tsp baking powder
1 tsp cinnamon
2 heaped tbsp protein powder (I used vegan white choc flavour)
Dried tart cherries
FROSTING
Melted dark choc
Cacao powder
Coconut yoghurt
Maple syrup
Almond milk
Method
1. Preheat oven to 180C/350F and grease a pan
2. Whisk the first 6 ingredients and set aside for 10 minutes
3. Grab a large bowl and sift dry ingredients. Stir together
4. Gradually add the wet ingredients to the dry (add more milk required)
5. Chop dried cherries and fold through
6. Pour into pan and bake for around 20-25 minutes or until golden
7. Allow to cool
8. Mix together frosting ingredients and cover cake. Top with granola & rose petals.
