“The Baked Florida”
One of the first ideas that popped in my head for desserts at an American Style Brasserie was a Baked Alaska. Well, we couldn’t be further away here in Miami so I went with the local tropical flavors and named it after our state.
Pastry Chef @leitimaye @marygoldsbrasserie took it from here and created a light, bright, but decadent dessert with layers of passion fruit, mango, pineapple, and vanilla. All wrapped in a light and airy coconut merengue that finished tableside with a Haitian overproof rum that we spice ourselves.
