Mediterranean Pasta Salad Day 3 of week of lunches !!! This one is so easy and filling. It’s amazing for meal prep and makes a huge batch! You guys will love here’s the recipe 🤍 Ingredients -12 ounces whole wheat pasta -1 pint cherry tomatoes halved -1 cucumber diced -2 bell peppers diced -1/4 red onion diced -1/2 cup kalamata olives roughly chppped -1/4 cup basil sliced -1 cup chickpeas -1/3 cup olive oil -3 tbsp red wine vinegar -2 tbsp Italian seasoning -1/2 tsp salt -1/2 tsp pepper -1/2 tsp garlic salt -2 tbsp lemon juice Optional: -feta Instructions: Cook pasta according to the package. Drain and rinse with cold water to prevent it from cooking further. Add into a large bowl. Chop all veggies and add to the pasta. Add chickpeas. Mix together the ingredients for the vinaigrette and pour over the pasta salad. Mix well and adjust the seasonings as needed.
