Chickpea Gyros One of my favorite easy lunches to make! Takes about 20 minutes to prep & make you guys will seriously love it! Here’s the recipe 🤍🤍🤍 Ingredients: -pita bread -hummus Chickpeas: -1 15 oz can chickpeas -olive oil -cumin -salt -pepper Tzatziki: -1/2 grated cucumber -1/2 cup yogurt -2 tbsp fresh or dried dill -1 tbsp lemon juice -1 garlic clove minced -salt and pepper to taste Veggies: -lettuce chopped -cucumber diced -tomato diced -red onion diced -green pepper diced Instructions: 1. Preheat oven to 430F. Add chickpeas to a lined baking sheet and drizzle over olive oil. Sprinkle salt, pepper and cumin on top and mix well. Place in the oven for 20 minutes until chickpeas are golden. 2. Chop all veggies. Grate cucumber and set aside in a bowl. Squeeze out as much liquid as you can from the cucumber. Add ingredients for tzatziki sauce and mix well. 3. Assemble gyro. Spread a thick layer of your favorite hummus, add chickpeas and all other veggies.
