Eggs en Cocotte
Serves 2
Ingredients
4 large eggs
1 1ā2 tbsp unsalted butter
2 tbsp herbed boursin cheese, crumbled
4 tbsp cream
Salt & pepper
1ā2 demi baguette, sliced
Toppings:
Chili oil, chives, dill, flakey salt and black pepper
Directions
Preheat the oven to 350°F Degrees. Brush oven-proof ramekins (with lids) with butter. Crack 2 eggs into each ramekin; season with salt and pepper.
Add crumbled boursin cheese into the ramekin with cream. Cover ramekin with lid and add to a baking dish. Add boiling water to the baking dish - covering the ramekins half way. Bake for 12-15 minutes. To ensure food safety, egg dishes should be cooked to 160°F.
Remove ramekins from the oven and once cooled, place on a plate. Remove lid and top with flakey salt, black pepper, chili oil, chives and dill. Serve with sliced toasted baguette and enjoy!
