... a great way to use up mushrooms and to elevate your egg on toast game.
METHOD:
* Pour boiling water over a handful of dried porcini mushrooms to re-hydrate.
* Blitz up a large handful of chestnut mushrooms, 1 garlic clove, the leaves from a few sprigs on fresh thyme, and a pinch of dried sage.
* Add mushroom mixture to a dry pan and allow all of the liquid to evaporate. Let the mixture fry over a low heat for as long as you like.
* Blitz the porcinis and add to the pan. You can add a little porcini stock water here and a drizzle of balsamic. Allow the liquid to absorb once more.
* Season with salt, pepper and lemon juice. Taste and adjust accordingly.
* Blitz mixture for a final time until it forms a paste.
* Slather over toast and top with jammy eggs.
