Salvatore Marino is not only a talented wine maker but he also comes from generations of olive oil making in Sicily with his grandfather being the first in Eloro Pachino to have a modern olive oil press. We are honoured to have @turi_marino olive oil at Brat and Brat in Climpson’s arch as our house olive oil. Salvatore blends two varieties of olives- Moresca as the gentle base with Verdese as the back bone with it’s stronger characteristics of green tomato leaf and artichoke. The olives are hand harvested and pressed the same day, and unlike his wines the oil is filtered before bottling because the lees can cause off flavours.
