I can finally put recipes in my captions! *makes 12 cupcakes* Ingredients for the cupcakes: - 1 1/2 cups + 2 Tbsp cake flour - 1 1/2 tsp baking powder - 1/4 tsp salt - 2 eggs - 1/2 cup vegetable oil - 1/2 cup granulated sugar (use 3/4 cup if you prefer a sweeter taste) - 1 1/2 tsp vanilla extract - 3/4 cup milk Ingredients for the filling: - 1/2 cup coffee, cooled - 1/2 cup mascarpone - 1/4 cup unsalted butter, at room temp - 1/2 cup powdered sugar - 1/2 tsp vanilla extract Ingredients for the whipped cream frosting: - 3/4 cup heavy whipping cream - 1 tsp vanilla extract - 1 Tbsp powdered sugar Directions: 1. In a large bowl, mix together the oil, sugar, eggs, milk, and vanilla extract. Once combined, add in the flour baking powder, and salt. Mix until smooth. 2. Pour batter 3/4 of the way up into each cupcake liner. Place in the oven at 350degrees Fahrenheit for 18-20min or until toothpick inserted in the center comes out clean. Let cupcakes cool on a cooling rack. 3. For the filling, use a hand mixer or stand mixer to cream the butter and mascarpone together for 1 minute. Add in the vanilla and powdered sugar and mix for 2-3 minutes. Transfer the filling into a piping bag. 4. Use a piping tip to carve out the center of each cupcake. Dip the cupcakes into the coffee and pour about 1/2 tsp of coffee into the center. Next, fill the center of each cupcake with the mascarpone filling. 5. For the whipped cream frosting use a hand mixer or stand mixer to whip the heavy whipping cream, vanilla extract, and powdered sugar until stiff peaks form. Do not over mix.
