Muscovy duck breast with kumquats, celery root and tortellini. We play on the classic duck a l’orange but use kumquats in place of the oranges. We poach the kumquats in a syrup and dress them in a kalamansi vinegar. We accompany that with two different preparations of celery root.
Our tortellini pasta is made with three different colored pasta doughs and filled with burrata and Camembert cheeses. We finish with a rich duck jus that is seasoned with tangerine juice and the peel and pickled celery to tie back to the celery root on the dish.
