I will forever make this salad to transport me to Greece in no time. This greek salad takes only 15 minutes to make and is the freshest thing you’ll eat! Ingredients: (4 servings) 2 large tomatoes 1/2 Red and 1/2 Green Peppers 3 Persian Cucumbers 1/2 White Onion 1/2 cup Kalamata Olives 1 Lemon 2 tbsp Olive Oil Cooked bay leaves for added flavor Vegan feta (optional) Salt and pepper to taste Roughly chop all vegetables, add them to a large bowl. Squeeze the juice of one lemon onto your vegetables, and add 2 tbsp of olive oil! Add your bay leaves, salt and pepper, and toss the salad. Transfer small portion to another bowl or plate and add vegan feta on top! Voilà! So simple, yet so good! Bon appétit!
