Recipe: *makes 12 cupcakes Ingredients for the cupcakes: - 1 1/2 cups + 2 Tbsp cake flour - 1 1/2 tsp baking powder - 1/4 tsp salt - 2 eggs - 1/2 cup vegetable oil - 1/2 cup granulated sugar (use 3/4 cup if you prefer a sweeter taste) - 1 1/2 tsp vanilla extract - 3/4 cup milk Ingredients for the apple filling: - 2 small apples peeled and cut into small cubes - 2 tbsp light brown sugar - 1 tsp vanilla extract - 1 tsp flour - 1/2 tsp cinnamon - 1/4 tsp ground nutmeg Ingredients for the frosting: - 1/2 cup unsalted butter at room temp - 1 cup powdered sugar - 1/2 tsp cinnamon - 1/2 tsp vanilla extract Directions: 1. In a large bowl, mix together the oil, sugar, eggs, milk, and vanilla extract. Once combined, add in the flour baking powder, and salt. Mix until smooth. 2. Pour batter 3/4 of the way up into each cupcake liner. Place in the oven at 350degrees Fahrenheit for 18-20min or until toothpick inserted in the center comes out clean. Let cupcakes cool on a cooling rack. 3. For the filling: mix all the ingredients for the filling in a medium sized pot on medium low heat. Let the apples cook for 10 minutes. Stir occasionally. Once the mixture thickens take the pot off the heat and let the apple mixture cool completely. 4. For the frosting: using a hand or stand mixer to beat the butter for 1 minute. Add in the powdered sugar and cinnamon and beat for 2 minutes or until light and fluffy. 5. Use a piping tip to carve out the center of each cupcake. Pour about 1 Tbsp of the apple filling into each cupcake center (make sure the filling is cooled completely). 6.
