Wagyu NY Strips with a Bourbon Creme and Mushroom Sauce using this months @grillmastersclubvip box!
We started with 2 wagyu NY strips from @worldofwagyu_usa and seasoned them with @bbqpitboys Kansas City rub. (If you want a little extra heat, use the habanero hot sauce as a binder). We inserted our @meatermade probe and got out 12” @finexcookware skillet screaming hot on the @traegergrills induction cooktop. Added a little @fresh_vintage_farms almond oil and placed the steaks down to sear. We flipped these every 30 seconds to build up that crust. When the IT hit 125F we pulled them to rest.
We then deglazed the skillet with @rabbithole Heigold whiskey and added some sliced baby portobello mushrooms. When the mushrooms were cooked we poured in some heavy cream, added some @bbqpitboys Whiskey BBQ sauce and the @psseasoning On The Rocks bourbon pepper. These all played nicely together with citrus and pepper flavor notes as well as that bourbon/whiskey backbone. We let this render down to thicken.
We then sliced our steak using our @dalstrong Delta Wolf series knife on the @thebullswood block for a perfect medium/medium rare (140F final). Plate up the steak and pour over the bourbon mushroom cream sauce!
I did to a little heavy handed with the sauce but it was sooo good. I practically drank it off the plate!
