August heat rhymes with strawberry treat. The easiest and most delicious vegan strawberry shortcake you will ever make. Ingredients: 4 cups Fresh strawberries 4 cups vegan coco whip (I use @so_delicious) 3/4 cup strawberry jam 2 cups all purpose flour 1 cup coconut sugar 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 cup cool water 1/3 cup coconut oil 1 tablespoon distilled white vinegar 2 teaspoon pure vanilla extract Cake recipe: 2 cups all purpose flour 1 cup coconut sugar 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 cup cool water 1/3 cup coconut oil 1 tablespoon distilled white vinegar 2 teaspoon pure vanilla extract Preheat oven to 350 F. Grease cake loaf or 9 inch round cake pan. Place dry ingredients into a bowl and combine well, whisky until thoroughly blended. In another bowl, add liquid ingredients and stir. Add liquid to dry mixture and gently stir until there are no lumps. Pour into pan and bake for 28 minutes. Once baked, let it entirety cool before taking out. Once caked has cooled, cut it in half. On the bottom half, spread a thick layer of strawberry jam. Then, add another even layer of coco whip. Slice your strawberries thinly and place on top of coco whip (as shown). Place the other half on top. Spread jam and coco whip again, and add another layer of sliced strawberries. I added flowers to decorate it, but it is optional. Bon appeฬtit!
