Raw Kibbeh with Sea Urchin Known as Chi Kufteh or Misadzavar for Armenians. Misadzavar translates to “meat with cracked wheat.” Raw lean meat (usually lamb or beef) is ground to a paste like consistency and is mixed with cracked wheat, pomegranate molasses, and spices. In America it has been dubbed as “Armenian steak tartare” and predates it’s European counterpart by more than a millennium. This dish is said to originate in the now occupied city of Urfa (Urhay in historical Armenia) and is also a staple for the Armenians of Cilicia.
