Made with sprouted whole wheat flour and other clean ingredients it’s a slice worth savoring and sharing 🍕 ☀️ Big thank you to @thehealthyishchef for this pizza recipe which is proof that pizza can be nourishing, simple, and seriously delicious 🤌✨ ✨Zucchini Pizza Recipe✨ Ingredients Pizza Dough (makes two crusts) ✔️1 cup lukewarm water ✔️2 teaspoons active dry yeast ✔️1 teaspoon honey ✔️2 cups @onedegreeorganics sprouted whole wheat flour ✔️1/2 teaspoon salt ✔️1 tablespoon olive oil, plus more for greasing the pan Cornmeal (optional, for lining the pan) Toppings ✔️1 large zucchini, thinly sliced into rounds (about 1⁄4 inch thick) ✔️1⁄2 cup cottage cheese ✔️1 garlic clove ✔️6 basil leaves ✔️1⁄4 cup grated ✔️Parmesan cheese ✔️Salt, pepper, and red pepper flakes to taste ✔️Olive oil Directions ✔️In a large bowl, combine the water, yeast, and honey. Mix and let sit until foamy, about 10 minutes. ✔️Add the olive oil, flour, and salt to the yeast mixture and stir until a sticky dough forms. ✔️Turn the dough out onto a floured surface and form into a ball. Knead for a few minutes, until smooth. ✔️Rub the same bowl with olive oil, place the dough inside, and turn to coat. Cover with plastic wrap and place in a warm spot for 1–2 hours, or until doubled in size. ✔️Once doubled, punch the dough down and divide it into two balls. On a floured surface sprinkled with cornmeal, roll out each dough ball. Line a sheet pan or cast iron skillet with olive oil and place the dough on the pan. ✔️In a food processor, blend the cottage cheese, garlic, and basil until creamy. Add a pinch of salt and pepper. Spread the mixture over the crust, leaving space around the edges. ✔️Top with zucchini slices, slightly overlapping, and drizzle with olive oil—season with salt, pepper, and red pepper flakes.
