Curious to learn how farmer Kai’s delicious olive oil makes it from the hills of Italy direct to NYC? We took a trip to see how the olive harvest is done with @olio.nuovo ! 🕊️
Much of the harvest process is still done by hand. Nets are carried and drawn taught around the trees to catch the falling olives. Hand-held machines called Abbacchiatori are used to assist in the harvest, reaching high to “tickle” and send olives flying off their branches.
At the end of each day the olives are collected into cassetas and driven directly to the communal olive oil press where the olives get sorted, washed, milled and extracted using a centrifuge leaving you with pure, hyper-green extra virgin olive oil.
