Sizzlin’ Skillet Fajitas Yield: 6 servings Prep Time: 15 minutes Total Time: 30 minutes INGREDIENTS Juice of 2 limes 1 tablespoon chili powder 1⁄2 teaspoon garlic powder 1 teaspoon ground cumin 2 tablespoons extra virgin olive oil, divided Kosher salt, to taste 1 1⁄2 lbs. boneless, skinless chicken breasts, cut into strips 1 medium yellow onion, sliced 1 cup Mezzetta® Roasted Red Bell Pepper Strips, drained 1⁄2 cup store bought salsa 12 (8 inch) flour tortillas, warmed for serving Shredded cheddar cheese, for serving Mezzetta® California Hot Sauce, for serving Mezzetta® Sliced Tamed or Hot Jalapeños, for serving Mezzetta® Pickled Red Onions, for serving INSTRUCTIONS 1. In a large bowl, add the lime juice, chili powder, garlic powder, cumin, 1 tablespoon of extra virgin olive oil and the chicken. Season with salt, toss everything to combine and set aside to marinate. 2. Heat the remaining tablespoon of oil in a large cast iron skillet over medium-high heat. Add the onions and sauté until slightly tender, about 4 minutes. Add the Mezzetta® Roasted Red Bell Pepper Strips and sauté for an additional 1-2 minutes. Remove from the pan and set aside. 3. In the same skillet, add the chicken and cook for 4-5 minutes or until browned and fully cooked through. Stir in the salsa and pepper mixture and toss to combine. 4. Serve the skillet with warmed tortillas, shredded cheese, Mezzetta® California Hot Sauce, Mezzetta® Sliced Jalapeños and Mezzetta® Pickled Red Onions as toppings or your own favorite fajita toppings! 5.
