Today I work my last shift with Simon. Many of you may know him as the light hearted, sweet, funny, country-obsessed chef from Wisconsin in our restaurant, but he is far more than that. I remember the day he walked in, denim short-shorts, sleeveless denim jacket, bike in hand: “Hey y’all. You didn’t reply to my email, so I thought i’d pop in”. Simon walked into our restaurant and made it his own. He entered willing to do any job, he had no experience, he just wanted to be there. Everything he approached, he wanted to achieve perfection. Two years down the line, working every section, through the trenches, enduring his painful country singing, running, sweating, crying, laughing, he leaves a Junior Sous. Simon is testament that it is possible to be a positive and friendly force of nature whilst maintaining a serious and professional standard. He encapsulated everything I ever wanted for this restaurant, we grew up together in this space, through success and through failure, learning from each other, and pulling each other up when necessary. There will never be another Simon David. Good luck in Paris. I love you very much @vinniechaser, a fellow kurd, and döner king.
