🌽Mexican Street Corn Salad 🌽 . 🌽4-5 corn on the cob 🫑2 Poblanos 🧅1 small red onion 🌶2 fresh jalapeños 🌿cilantro 🍋1 lime Queso Fresco 🧂 S& P Dressing: 1/3 c. Crema 1/3 c. Mayo 1 Tbsp Chipotle adobo 1 pinch of salt Cilantro, finely chopped 1/2 lime, juiced 1 fresh garlic clove Top with @tajinusa ♨️Corn for this salad was made at the same time as my chipotle chicken dinner; baked corn, poblanos & salsa ingredients for around 20min @ 400 degrees. Dice all ingredients & toss together. Dressing is optional.
