Sheng Jian Bao - ηη

A dish originating from Shang hai, these buns are related to the famous xiao long bao. Here the filling is encased in yeast dough. This makes for a soft, fluffy, crispy and juicy bao.
Since related to xiao long bao, it usually has jellified broth mixed in, but some case like this one, water or broth is mixed in to make it juicy π
ingredients:
210g/ 1 cup Plain flour(I used Chinese flour for bao)
~100ml warm water
1 tsp sugar
1/2 tsp instant yeast
1/2 tsp vegetable oil
Filling
190g minced pork
175g napa cabbage (chopped, salted n drained)
Handful chppped coriander
2 scallion, minced
2 garlic minced
1/2 tsp shaoxing
1.5 tsp soy sauce
1/2 tbsp oyster sauce
1/2 tsp sesame oil
1/4 tsp 5 spice power
1/4 tsp msg (optional)
1/4 tsp sugar
1/4 tsp white pepper
2-4 tbsp broth/water
Method:
1. bloom the yeast in a bowl, with the warm water and sugar and let sit for 10 mins (otherwise add instant yeast directly to flour)
2. In a bowl, add flour, instant yeast (if using), sugar and mix
3. Pour in warm water (or bloomed yeasted) and mix until shaggy dough forms.
4. Knead until nice and smooth (8-10 minutes) then rest covered under damp cloth (30mins-1hr or doubles in size.)
5. For filling, add all ingredients into bowl and mix until filling is combined and liquid absorbed. (make sure water from cabbage has been drained so filing not watery)
6. Flatten dough, knead and roll into log, split in half, roll more and divide evenly and shape into small balls.
7. Flatten and roll into discs, edges should be slightly thinner than middle
8. Depending on size of wrapper, add 1 tsp - 1 tbsp of filling, and pleat.
9. Cover and rest for 10 mins
10. On a pan over med heat, add oil then place baos, donβt wait for oil to get hot.
11. When you can hear bottoms getting fried or after 2 minutes, pour in around 1/4 cup water then cover and cook for 8 minutes.
12. After reduce heat to low and cook for 2 minutes or until water has evaporated and bottoms are browned.
13. Serve with sprinkles sesame seeds, spring onion and optional chilli oil
