I love a warm, wholesome & #delicious #dinner in this chilly weather (serves 4 Hungry Friends): 🐟 PAN SEARED ARCTIC CHAR 🄬 WARM ROASTED & SHAVED BRUSSELS SPROUTS CAESAR SALAD 🌰 MISO GARLIC CHICKPEA CROUTONS šŸ‹ HOMEMADE CAESAR SALAD DRESSING #Fish: 4 skin on #Arctic Char filets (6 oz. Each) Salt to taste Olive oil, as needed #Beans: 14 oz can #Chickpeas, drained 2 TBSp miso paste 1 TSP garlic powder 1 TBSP olive oil Brussels: 2 lbs Brussels Sprouts (thinly slice/shave 1.5 cups & reserve; halve the rest for roasting) 1 TBSP olive oil 1/2 TSP Sea salt Dressing: 2 egg yolks, room temp 4 TBSP freshly squeezed lemon juice 4 garlic cloves, minced 2 TSP dijon mustard 1 cup olive oil 1/2 cup freshly grated #parmigianoreggiano #cheese 1 TSP freshly cracked black pepper Combine garbanzo ingredients, spread onto a parchment lined baking sheet. Combine halved sprouts with oil, salt, spread onto separate lined sheet. Roast both in 400F preheated oven, peas for 30 mins & greens a bit longer, about 35 mins. Chickpeas should be dry but not charred. Brussels Sprouts should just begin to char. While roasting, combine all the dressing ingredients except cheese, in a blender or food processor. Blend until smooth. Fold in cheese & set aside. Season fish lightly with salt. Sear fish for 4 minutes on skin side first then 3 mins on flesh side in a hot, lightly oiled cast iron skillet. Remove & rest skin side up. Combine roasted & raw greens. Lightly dress, gently toss. Add chickpeas, like croutons.
