The Bilbao is a drink that I can't believe I haven't talked about yet.
It was part of the opening menu for Fellow over a year ago and is now one of the house classics but it actually grew out of prep for @worldclass globals.
At its heart this drink reads like a straightforward martini. Two ingredients, stirred and served up. But that simplicity belies the behind the scenes work to make the drink truly unique.
It starts by washing the gin with a first press, virgin olive oil. This adds texture as well as a hint of that olive for dirty martini drinkers.
Next, every true martini requires vermouth and here the dry vermouth is infused with rosemary and lemon. This lends an herbaceousness and citrus note to compliment the citrus in the gin. It also adds a bright crispness that you would expect from a dry martini.
These two ingredients are stirred together with a few drops of saline, garnish with a rosemary and lemon stuffed olive and viola! You have a delightful mashup of a classic and dirty martini, with a rich mouthfeel and a massive blast of flavor that will leave you feeling like you just had liquid tapas outside of Bilbao.
