The gloomy weather has me in the mood for chicken thighs and rice. One pan dinner. Chicken is first seared (start skin side down in a cold pan- then turn the heat up to medium low until skin is crisp) and finished braising atop garam masala and smoked paprika spiced vegetables and jasmine rice. Chopped herbs, citrus and green olives bring some bright flavours at the end.
