We’ve got a gusher!!! 💦 If you’ve never had a Wagyu brisket, what are you waiting for??? This pretrimmed brisket from @wodagyu was incredibly full of flavor & was flowing like a river.🥩💦 Want one of your own? Here’s how I prepared it: 🔥- I coated it with simple rub of 50/50 Kosher salt & coarse ground black pepper. 🔥- on to the XL @biggreenegg at 250° until it hit an internal temp of 170°. 🔥- One the bark was where I wanted it, I took it off, basted it with those beautiful Wagyu drippings and wrapped it in butcher paper. 🔥- Back on the Egg until it was probe tender which was 200° on this one. Right into a @cambromfg to rest and let the meat rest and all of those juices redistribute themselves. 🔥- A 2 hour rest did it right and then sliced it across the grain.
